Funazushi preparation kit project selected for support from 2023 “Healthy Shiga” project

Aiming to promote and establish traditional fermented foods and funazushi culture of Shiga Prefecture


In July 2023, a project to create a simple funazushi preparation kit that was planned and developed by Ryukoku University Resource Center for Fermentation and Brewing was selected for support from the 2023 “Healthy Shiga” project. The “Healthy Shiga” project organized by Shiga Prefecture aims to extend the health life expectancy of residents of Shiga Prefecture by soliciting and supporting initiatives that improve health.

The goal of the project, titled “Bringing the experience of making funazushi to more people with a simple funazushi preparation kit,” is to help people understand the process of fermentation and the health benefits of funazushi, a traditional fermented food of Shiga Prefecture, by helping them to make funazushi at home with a simple funazushi preparation kit.

The kit and recipe were developed by Professor Koichi Tanabe (Faculty of Agriculture, Ryukoku University), Director of the Microbial Resource Center for Fermentation and Brewing, and others by applying the results of research conducted at the center. A piece of salted crucian carp and rice are processed together in a compressed plastic bag by a simple method that can be attempted by anyone. Using a transparent bag is an important part of the experience that allows people to view the funazushi fermentation process.

A trial sale of the kit and recipe demonstrations will be held at various events in Shiga Prefecture to promote and establish the practice of simple funazushi preparation.
